  Pan roasted Salmon with Mustard potatoes

Roasted Salmon

Ingredients
2 T Olive oil
2 Salmon fillets, bones removed
Salt and pepper

Directions
  1. Heat oil in pan over Low heat.
  2. Season salmon with salt and pepper, and place the fillets skin-side down in pan.
  3. Cook at least 2 minutes on each side or until done to your preference.
  4. Serve with Mustard potatoes.

Mustard Potatoes

Ingredients
8 Small potatoes
1 heaped T Seeded mustard
Juice of ½ lemon
3 T Extra-virgin olive oil
Salt and pepper to taste

Directions
  1. Place potatoes in a pot of cold water. Bring to the boil.
  2. Remove pot from heat when potatoes are starting to get soft.
  3. Cool, then halve pototoes, leaving the skins on.
  4. Combine the mustard, lemon juice, olive oil, and seasoning and toss through the potatoes.
Serves 4
